Unbundle LibreOffice package from Docs install package and use the LibreOffice version package from the Operating system

Unbundle the LibreOffice package from the Docs install package and create a documentation that would help customers to install the LibreOffice manually.

Also, suggesting to allow customers to use the LibreOffice package of the operating system instead of confuring the config JSON file for the path of LibreOffice. Red Hat delivers LibreOffice in their official repositories, these gets updated on a regular basis (security patches) and as Docs does not use exotic functions, this should be the right approach to get the office package.
